  • 1 block silken tofu (or soft tofu, 300g)
  • 2 tbsp oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1 tsp miso paste
  • 1/2 tsp salt (divided, adjust to taste)
  • Pepper (to taste)

Directions

  1. Bring a pot of water to a boil and cook pasta according to package instructions. Save 1/2 cup of pasta water.
  2. Heat oil in a pan, sauté diced onion for 1 minute until softened and fragrant.
  3. Add minced garlic to the pan and sauté for 30 seconds, then remove from heat.
  4. Blend silken tofu, sautéed onion and garlic, lemon juice, nutritional yeast, and miso paste until smooth.
  5. Gradually add reserved pasta water while blending to achieve a creamy consistency.
  6. Drain pasta (don’t rinse) and return it to the pot.
  7. Mix the tofu sauce with the pasta. Thin with additional pasta water or regular water if needed.
  8. Add salt and pepper to taste. Optionally, garnish with fresh parsley and vegan parmesan.
