Directions
- Bring a pot of water to a boil and cook pasta according to package instructions. Save 1/2 cup of pasta water.
- Heat oil in a pan, sauté diced onion for 1 minute until softened and fragrant.
- Add minced garlic to the pan and sauté for 30 seconds, then remove from heat.
- Blend silken tofu, sautéed onion and garlic, lemon juice, nutritional yeast, and miso paste until smooth.
- Gradually add reserved pasta water while blending to achieve a creamy consistency.
- Drain pasta (don’t rinse) and return it to the pot.
- Mix the tofu sauce with the pasta. Thin with additional pasta water or regular water if needed.
- Add salt and pepper to taste. Optionally, garnish with fresh parsley and vegan parmesan.
