  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 red chili, diced (seeds removed for less heat)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp ground nutmeg
  • 1 tsp red paprika powder
  • 2 tbsp tomato paste
  • 2 cups red split lentils, rinsed
  • 3-4 cups vegetable broth (start with less and work your way up)
  • 1 cup full-fat coconut milk
  • Juice of 1 lime
  • Salt and black pepper to taste

Directions

  1. Sauté diced onion and minced garlic until softened.
  2. Add diced red chili and spices (turmeric, cumin, coriander, nutmeg, and paprika); cook for a few minutes.
  3. Stir in tomato paste and rinse red split lentils.
  4. Add lentils and vegetable broth, starting with less, and simmer until lentils are tender.
  5. Mix in coconut milk and lime juice; season with salt and pepper to taste.
