- Soak chickpeas overnight, ensuring water covers them by 2-3 inches.
- Preheat oven to 400°F (200°C).
- Drain and rinse chickpeas. Add to food processor with onion, parsley, cilantro, chile, garlic, spices, and baking soda. Process to a fine grain.
- Refrigerate mixture for 30–60 minutes.
- Mix in chickpea flour, water, and olive oil. Combine well.
- Press mixture onto a parchment-lined baking sheet (10.5 x 15 inches).
- Bake for 25 minutes.
- Cool for 10 minutes and slice.
