  • 1 cup dried chickpeas, soaked overnight
  • 1/2 cup onion, roughly chopped
  • 1 cup parsley, roughly chopped
  • 1 cup cilantro, roughly chopped
  • 1 small green chile pepper (serrano or jalapeño)
  • 3 garlic cloves
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp cardamom
  • 1/4 tsp black pepper
  • 1/2 tsp baking soda
  • 1/2 cup chickpea flour
  • 3 tbsp water
  • 1 tbsp olive oil

Directions

  1. Soak chickpeas overnight, ensuring water covers them by 2-3 inches.
  2. Preheat oven to 400°F (200°C).
  3. Drain and rinse chickpeas. Add to food processor with onion, parsley, cilantro, chile, garlic, spices, and baking soda. Process to a fine grain.
  4. Refrigerate mixture for 30–60 minutes.
  5. Mix in chickpea flour, water, and olive oil. Combine well.
  6. Press mixture onto a parchment-lined baking sheet (10.5 x 15 inches).
  7. Bake for 25 minutes.
  8. Cool for 10 minutes and slice.

Notes

  • This recipe creates a 10.5 x 15 inch flatbread.
