Ingredients
- 1 tablespoon olive oil
- 1 small onion diced
- 2 garlic cloves minced
- ½ red bell pepper diced
- ½ teaspoon chili powder
- 1 cup long grain white rice
- ½ teaspoon cumin
- kosher salt to taste
- 8 ounces tomato sauce
- 1 cup vegetable or chicken broth
Directions
- Wash and drain the rice in a fine mesh sieve.
- Heat oil in a saucepan, sauté onions, garlic, bell pepper, and chili powder for 1-2 minutes.
- Add rice, cook until golden, then add cumin, salt, tomato sauce, and broth.
- Bring to a boil, cover, reduce heat, and simmer for 15 minutes.
- Fluff rice with a fork and serve.
