  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • ½ red bell pepper diced
  • ½ teaspoon chili powder
  • 1 cup long grain white rice
  • ½ teaspoon cumin
  • kosher salt to taste
  • 8 ounces tomato sauce
  • 1 cup vegetable or chicken broth

Directions

  1. Wash and drain the rice in a fine mesh sieve.
  2. Heat oil in a saucepan, sauté onions, garlic, bell pepper, and chili powder for 1-2 minutes.
  3. Add rice, cook until golden, then add cumin, salt, tomato sauce, and broth.
  4. Bring to a boil, cover, reduce heat, and simmer for 15 minutes.
  5. Fluff rice with a fork and serve.
