Ingredients

  • 6 dried chillies (medium heat e.g. kashmiri, remove stem)
  • 3 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 10 black peppercorns
  • 10 cloves
  • 6 green cardamom pods
  • 1 cinnamon stick (7.5cm)
  • 3 tbsp amchur powder
  • ½ tsp ground turmeric

Directions

  1. In a large pan, toast the spices (except for the amchur and turmeric powder).
  2. Use low heat and stir frequently until the spices are fragrant, about 3-5 minutes.
  3. Grind the toasted spices into a fine powder.
  4. Stir in the amchur and turmeric powder.
